Nahun Fernandez - Honduras - Paraneima - Honey

Introducing a new producer to the Uncommon line-up, Nahun Fernandez! Nahun has placed in the Honduras Cup of Excellence three times, each time with a version of his Parainema, including a honey-processed lot that won 13th place in 2018. This lot is a wonderful expression of Paraneima, which could be said to be Honduras' national variety. It has everything we love about the honey process: sweetness, body, jammy fruit and clean, fine acidity. We have notes of orange, honeycomb and peach.

Awards

Microclimate

The mountainous region surrounding Lake Yojoa has a consistent dense, cool, afternoon fog that slows coffee cherry maturation, leading to increased density and complex acids.

Nahun has become known as a 'coffee processing expert' and is sharing his knowledge and expertise with other coffee producers in Santa Babr

Las Flores sits at 1500-1550 masl in Santa Barbara, is a cold, humid and mountainous region with volcanic soils.

Variety

Parainema is a high-yielding, leaf rust-resistant Arabica hybrid developed by IHCAFE in Honduras, stemming from the Sarchimor family (Villa Sarchí × Timor Hybrid).

Process

Fully ripe cherries are floated, sorted, and depulped and laid to dry on raised beds in their mucillage as 'honey'.
