Jhoan Vergara Decaf - Colombia - Pink Bourbon - Washed
A groundbreaking decaf by Jhoan Vergara of Finca Las Flores. This is high quality Pink Bourbon, from the place it grows best: the mountains of Acevedo, Huila. Combine that with expert multi-stage fermentation, as we've come to expect from Jhoan, and gentle decaffeination by sugarcane and you're left with something to drink anytime, anywhere! Expect notes of orange blossom, khaki, and cream.

Las Flores is a 16 hectare farm cultivating Pink Bourbon, Red Bourbon, Yellow Bourbon, Sidra, Caturra, Chiroso, Tabi, Java, Maracaturra, Geisha, Colombia, and Wush-Wush.
Region
Huila is geographically perfect for coffee growing and is quickly becoming one of Colombias biggest coffee growing regions.
Competition
In 2006, Finca Las Flores placed 16th in the Cup of Excellence, and in 2019, Jhoan won first place in the Master of Coffee competition with his Pink Bourbon, competing against 162 participants.
Terroir
Las Flores sits at 1750 masl on mineral-rich, black soils. The high altitudes help to lower temperatures in Huila’s warm, tropical climate.
Variety
Pink Bourbon is an Ethiopian landrace variety famed for it's florality & citrus notes. In this particular lot, the natural processing showcases the citrus and brings out a layered, red-fruit quality.
Process
Anaerobic fermentation for 36 hours, followed by 12 hours of oxidation, and then an additional 36 hours of anaerobic fermentation after depulping. The decaffeination process is carried out using sugarcane, followed by a thermal shock for 30 minutes at 50°C.
Pink Bourbon
"The mistakenly-named Pink Bourbon is not a Bourbon at all, nor a mutation of Bourbon, but actually an Ethiopian landrace variety."
The origins of how this Ethiopian landrace variety, with its pinkish-hued fruit, landed in Colombia is a mystery. The most likely explanation is that someone, at some time, tried to bring in Gesha seed from Ethiopia and instead ended up with what we now know as Pink Bourbon. What we do know however, is that this person lived in Huila, and planted the variety alongside an abundance of Bourbon. Suspicions that this ‘Pink Bourbon’ was not actually Bourbon at all quickly came about when the pink-variation began dominating cupping tables with a profile unlike any other Bourbon before it. The pronounced florality, citric acidity and tea-like quality set it on a path to become a highly sought after cult-favourite amongst the specialty coffee world. Finca Las Flores started as a dream in 1990 when Edilberto Vergara and Nubia Ayure planted their first coffee trees. With just 2 hectares dedicated to coffee, they worked hard to build a future for their family. By 1998, the farm was fully planted, and their five children—Xiomara, Leonardo, Carlos, Jhoan, and Diego—grew up immersed in the rhythms of coffee farming. In 2006, Nubia’s passion and dedication led her to the Cup of Excellence, where she placed 16th—an achievement that encouraged the family to dive deeper into specialty coffee.
